Springfield Pole Barn Chic design firm to inaugurate new site

Local chef Kevin Sullivan has sold The Barn, but that doesn’t mean he’ll stray from crafting his signature farm-to-fork dishes.

Sullivan is the executive chef / culinary director of Pole Barn Chic – the full-service event design company established a year ago, which is slated to lead the way next week to a new event location right next to the ‘Interstate 55 north of the Toronto Road exit.

The 8 acres just north of the Baymont Wyndham Springfield hotel will soon house a 13,000 square foot main building that can accommodate up to 650 people and a full dance floor.

Owner Audrey Kondelis has said she is aiming for an opening in the summer of 2022.

“I had met Audrey last year when I threw a Creole themed party for her and heard that she wanted to talk to me again,” Sullivan said. “I thought it was about preparing food for another party. But she wanted to tell me about my embarkation.

“I had just received an offer for someone to buy the restaurant four days ago, and then that offer came in. I thought the stars had aligned.

Sullivan said Pole Barn Chic will be a one-stop-shop offering everything from on-site dining services and a bakery to a DJ and flower arrangement. . . and don’t even ask Kondelis to take care of the balloons!

The dining menu will follow wherever guest party themes lead, but Sullivan said he will continue to use the same local farmers he relied on for The Barn’s grocery list.

Pole Barn Chic – whose logo is “We throw badass parties while dining in style” – was born out of a Kondelis fundraiser organized in late 2020 for Jerome Taylor, owner of MJ Fish & Chicken Express after the company at 716 E. Enos Ave. suffered a fire.

“The whole thought was to help Jerome,” said Kondelis, a Rochester native, now a resident of Chatham. “I put it on in three weeks and realized that was what I wanted to do.

“My brand is overkill, more is more.”

Pole Barn Chic spent its first year hosting pop-up parties and on-site venues. But Kondelis said it became clear from the start that she would need to build her own event space.

“When this started I was going to have a little office in my basement,” she said. “We looked at a few sites and even the best was way too small.”

The sequel to The Barn is still unknown.

Sullivan said he sold the farm-to-table restaurant at 1501 Wabash Ave. earlier this month, after shutting down the company’s doors in September. The Barn, which opened on May 6, 2020, has the distinction of being the first restaurant in the area to open during the statewide dining ban at the time.
